As you may remember from a recent post, I have decided to cut sugar from my diet. I found that my area hospital had a “Diabetes and Nutrition Center”. I did a quick internet search and gave them a call for more details. They walked me through requesting a referral from my primary doctor, confirming coverage with my insurance, and before I knew it I had an appointment to see a nutritionist. I went to the appointment armed with a three day food diary (as they requested) and lots of questions. I had a bit of fear, as well. The last few days have been jam packed with great things that I am dying to write about! This morning, while running the Bird In Hand Half Marathon, the topic on my mind was how do I approach the beast, do I write several topical posts or do I try to wrap them into a cohesive enough package for one post. Zucchini Lasagna

A few weeks ago, I got the notion to create a lasagna out of a zucchini I had. I did and it turned out great. After a few additional tweaks, it's safe to say this is added to my list of go to items that taste great and are in line with my nutritional goals. If you are afraid to try this because you don't need an entire casserole, don't fear, zucchini lasagna tastes even better left over. Start by browning ground turkey. I used a 1.25 pound pack.
