Turkey Pumpkin Chili

I'm sharing one of my favorite recipes today. It's easy, tastes great, AND it's healthy. I make Turkey Pumpkin Chili often and I usually double the recipe. Talk about easy meal prep!

Turkey Pumpkin Chili

1 cup chopped onion

½ green bell pepper, chopped

½ yellow bell pepper, chopped

1 4oz. can chopped green chilies

1 large garlic clove, minced

1 lb. ground turkey

1 14.5 oz. can diced tomatoes, rinsed, drained

1 14.5 oz. can red kidney beans, rinsed, drained

1 14.5 oz. can pumpkin puree

1 ½ tablespoons chili powder

½ teaspoon cumin

¾ teaspoon salt

½ teaspoon black pepper

Jalapenos and Red Pepper Flakes to taste, depending on your desired level of heat

In large pot, sauté onions, peppers, chilies and garlic for about 10 minutes. Add turkey, cook. Stir in remaining ingredients. Season to taste. Simmer at least 20 minutes.
