Berry Tasty Blueberry Scuffins

I LOVE scones and muffins and I am always looking for a ways to make healthier variations. Pastries and baked goods are rarely the way to start your day, but this recipe is actually breakfast worthy!

2 cups oat flour (easily make your own oat flour with oats and a food processor)

4 teaspoons baking powder

3 tablespoons sugar

¼ cup unsweetened applesauce

1 egg

1 cup unsweetened cashew milk

1 cup frozen or fresh blueberries

Mix dry ingredients, add wet ingredients. Fold in blueberries. Bake at 350 degrees for 25-30 minutes. Makes 6 large muffins or 12 medium muffins.
