Liz's Fit Banana Chocolate Chip Muffins
I wanted to share something a little less deep and personal today, but oh so tasty! These muffins are a hit in my house by the calorie counter and the non calorie counter. I've modified this recipe a few times to shave off a few more calories and each motification has actually produced a muffin that tastes better than the last. Enjoy these as a fun afternoon snack or a dessert!
Liz's Fit Banana Chocolate Chip Muffins
1 1/2 cups oats
1 teaspoon baking soda
1/4 teaspoon salt
3 Bananas
1/4 Cup honey
1 tablespoon vanilla
1 tablespoon olive oil
1 egg
1/2 cup nonfat plain greek yogurt
1 tablespoon unsweetened almond milk
1/2 cup semi sweet chocolate chips
Put oats in food processor and pulse until fine, flourlike texture. Transfer oat flour to a bowl. Add baking soda and salt. Mix together.

Add bananas, honey, vanilla, olive oil, egg, yogurt, and almond milk to a blender. Pulse on high until it makes a smooth mixture. Add wet ingredients to the bowl of dry ingredients. Mix until flour mixture is just wet. Fold in chocolate chips. Bake in a 350 degree oven for 20-25 minutes. Cool in muffin pan for 5 minutes, then remove and place on wire rack to continue cooling.
